Eggplant has a soft and sweet texture when cooked, and the ability to absorb the sauce is very good, helping the eggplant dish to be richer and more delicious. At first glance, many people will mistake this as the famous Japanese eel rice dish, but it is actually just rice combined with braised eggplant. This hearty, healthy dish is perfect for a busy or lazy day that doesn’t want to cook. A bowl of rice served with a few pieces of eggplant braised in soy sauce is enough for a full dinner.
To make soy sauce braised eggplant, you need to prepare the following ingredients:
2-3 long eggplants
2-3 tablespoons vegetable oil
2 teaspoons light soy sauce
1 tablespoon mirin
2 tablespoons of water
½ teaspoon dark soy sauce
½ teaspoon oyster sauce
½ teaspoon fish sauce
¼ – teaspoon sugar (optional)
1 green onion (finely chopped)
1 teaspoon roasted sesame
How to cook eggplant braised in soy sauce?
Wash the eggplant, cut it into pieces with a length of about 10-15cm. Peel off the skin. Because this peel will make the eggplant tough. Place the eggplant pieces on a heatproof dish.
Boil water in a steamer. Steam the eggplant over medium heat for 16-18 minutes, until the eggplant can be easily pierced with a chopstick.
Once they’ve been steamed and cooled enough to handle, cut the steamed eggplants in half lengthwise, but don’t cut them all. Open each section like a book. Use two forks to cut into the inside of the eggplant. This creates more surface area for the sauce that you will cook later.
Heat 2 tablespoons oil in a non-stick pan over medium-high heat. Fry eggplant on both sides until golden brown on each side.
Meanwhile, mix light soy sauce, mirin, water, dark soy sauce, oyster sauce, fish sauce, and sugar in a small bowl.
Pour the sauce mixture over the eggplant and simmer until the amount of sauce is reduced by half. You can flip the eggplant so that the sauce evenly coats all sides.
When eating, take the hot rice to a bowl, arrange the braised eggplant with soy sauce on top, sprinkle some green onions and roasted sesame and you’re done.
